The starting point

Begin with the ingredient. Ask what heat can reveal.

Some things need direct flame. Others need ash, smoke, coals or the slowly falling temperature after the fire has gone. The method follows the material, never the other way around.

Close producers

A short distance
to the kitchen.

Vegetables arrive from two regenerative farms outside Copenhagen. Fish is landed daily in Gilleleje. Game comes through licensed regional hunters, with every part used across the menu.
